What are the Benefits of Indoor Cycling?

According to the U.S. Department of Health ".....regular physical activity substantially reduces the risk of coronary disease, stroke, colon cancer, diabetes and high blood pressure.....and helps to control weight, contributes to healthy bones, muscles and joints... reduces symptoms of anxiety and depression..." Need we go on? Cycling is also "low-impact" without the joint stress that you get from "ground-pounding" sports and activities. All good reasons to strap-in/clip-on and RYDE!

 

 

Bloody Mary Gazpacho with Garlic & Paprika Grilled Shrimp

gaspazchoYield: 12 Servings


For Shrimp Ingredients:

  • Bamboo or metal skewers
  • 1-1/2 lb. jumbo shrimp (16-20 count), shells peeled, tails left on
  • 2 cloves garlic, finely chopped (about 1 tablespoon)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 tsp. kosher salt
  • 1/4 tsp. cracked black pepper

Directions:

  1. If using bamboo or wooden skewers, soak them in water for 30 minutes.  Prepare a gas or charcoal grill for medium heat.
  2. Remove the veins from the shrimp, if necessary.  In a large bowl, toss the shrimp with the garlic, olive oil, paprika, salt, and pepper.
  3. Thread the shrimp onto the skewers.  Oil the grill grate and place the shrimp skewers on the grill.
  4. Grill the skewers for 2-3 minutes per side or until the shrimp are opaque and firm.
  5. Remove the shrimp from the skewers and use them to complete the gazpacho appetizer below.

For Bloody Mary Gazpacho Ingredients:

  • 2 cups McClure’s Bloody Mary Mix
  • 2 cups tomato juice
  • ½ cup peeled, seeded cucumber, minced
  • ½ cup zucchini, minced
  • ½ cup red, yellow or orange bell pepper, minced
  • 1/2 cup grilled fresh corn (optional)
  • Fresh dill sprigs

Directions:

  1. Combine all of the gazpacho ingredients in a large non-reactive bowl or container and mix well.  Allow the flavors to blend for at least one hour.
  2. Portion about ½ cup of the gazpacho into glasses or small bowls.  Garnish each portion with a garlic roasted shrimp and a dill sprig.
