What are the Benefits of Indoor Cycling?

According to the U.S. Department of Health ".....regular physical activity substantially reduces the risk of coronary disease, stroke, colon cancer, diabetes and high blood pressure.....and helps to control weight, contributes to healthy bones, muscles and joints... reduces symptoms of anxiety and depression..." Need we go on? Cycling is also "low-impact" without the joint stress that you get from "ground-pounding" sports and activities. All good reasons to strap-in/clip-on and RYDE!

Pumpkin Muffins

  • 1 cup Canned pumpkin
  • 1/2 cup Applesauce
  • 1/2 cup Plain lowfat Greek yogurt (I like Chobani)
  • 3 Egg whites
  • 1 3/4 cup Old Fashioned Oats
  • 1/4 cup Protein powder
  • 1/2 cup Baking stevia OR 1 cup sweetener of choice that measures like sugar *
  • 1 tsp Baking soda
  • 2 tsp  Baking powder
  • 1/4 tsp  Salt
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Pumpkin pie OR Apple pie spice

Optional Add-Ins: 1/4 cup of chopped walnuts, pecans, or almonds, mini chocolate chips, raisins or dried cranberries!

Apple Scones with Spiced Maple Butter

Ingredients

  • 2 3/4 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tablespoon baking powder

  • 1 teaspoon apple pie spice or ground cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup butter, chilled and cut into small pieces

  • 1 cup finely chopped tart apple, such as Braeburn, Jonagold or Jonathan 
  • 2 eggs, lightly beaten

  • 3/4 cup whipping cream

  • 1 egg yolk, beaten

  • 1 tablespoon whipping cream
  • 16 -18 thin slices of unpeeled apple, such as Braeburn, Jonagold or Jonathan
  • Coarse sugar or granulated sugar
