What are the Benefits of Indoor Cycling?

According to the U.S. Department of Health ".....regular physical activity substantially reduces the risk of coronary disease, stroke, colon cancer, diabetes and high blood pressure.....and helps to control weight, contributes to healthy bones, muscles and joints... reduces symptoms of anxiety and depression..." Need we go on? Cycling is also "low-impact" without the joint stress that you get from "ground-pounding" sports and activities. All good reasons to strap-in/clip-on and RYDE!

Healthy Rice Crispy Oat Bars

Oat bars

This recipe was inspired by Christy Morgan’s cookbook, Blissful Bites: Vegan Meals That Nourish Mind, Body, and Planet

2 ½ cups unsweetened crispy rice cereal
2 ½ cups instant rolled oats
2 tablespoons chia seeds
2 tablespoons whole raw flaxseeds
½ cup unsalted peanuts, finely ground
⅓ cup semi-sweet chocolate chips (optional)
⅓ cup dried cranberries (optional)
¾ cup maple syrup
1 ¼ cup natural peanut butter

  1. Lightly oil 9- by 13-inch dish.
In a large bowl, toss the cereal, oats, seeds, peanuts, and chocolate chips together.
  3. In a small saucepan over medium-low heat, stir maple syrup and peanut butter until they come together into a thick syrup.  This takes just a few minutes.  Don’t let the syrup get too hot. You just need it warm enough for blending.
  4. Pour the syrup over the dry ingredients and fold together until well coated.
  5. Transfer the mixture to the oiled dish.
  6. Dampen your hands with water; then gently press the mixture to make solid bars.
  7. Leave the dish out on the counter for about an hour; or, if you have the space, place the dish in the refrigerator to help the bars firm up quickly.
  8. Cut into 24 bars.
